Bikini

Makes enough for 10 servings

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Drink (yields 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

Making the Citrus Syrup: Combine all the components into a saucepan, heat until it reaches a light boil, stirring until the sugar dissolves. Then, turn off the burner allowing it to cool down fully. Decant to a sterilised bottle, seal and store chilled, it can be stored for around a month.

Preparing the Premix: Mix every spirits and syrup into one large bottle, leave to sit for 60 minutes, then pass it through , ideally through muslin, making it fully clarified.

When ready to serve: Add 85ml of the batch mix to a mixing glass packed with ice, gently stirring gently for about 60 seconds to chill. Strain into a frosted cocktail glass or similar, top with a few cranberries and complete it using a quick spritz with the mandarin essence over the top.
